This comfortable trip follows the old Royal Road, or Camino Real, the way the Spanish settlers moved in colonial times during the Sixteenth and Seventeenth centuries. The aim of this trip is for travellers to savour – and learn how to cook – Andean gourmet dishes while at the same time discovering the history of colonial Argentina, the syncretism between Spanish and Indigenous Andean cultures, along with walking on trails that cross coloured mountains.

The high vineyards, the local traditional estancias and the Andes Mountains offer an excellent scenario for this; the local terroir is recognized by its bountiful sun radiation, a great temperature difference between night and day and mineral rich sandy soils. This combination of factors enhances aromas and flavours of locally grown vineyards, herbs and vegetables, creating unforgettable dishes.

Day by Day Itinerary

We meet at the Tucumán airport and transfer up to the green Valley of Tafí, by way of a mountain jungle road. Lunch will be a full introduction to local ingredients, where superb chef introduces you to the secrets of the quinoa, local spices and how to use sugar cane molasses. (L/D)

Today we take our first hike, leaving from the Estancia on a 3 hour walk to a puesto where your cooking skills are tested over an open fire. In the evening, the secrets of this Jesuit Estancia’s kitchen and cheese factory are disclosed. (B/L/D)

In the morning we leave our estancia and hike down into the Calchaquí Valley, home to the high vineyards of Argentina. We suggest you take advantage of the hotel’s wine spa before your lesson on how to cook empanadas, one of the main Argentine regional dishes. (B/L/D)

A morning three hour hike in the Quebrada de las Conchas, one of the most notorious landscapes in Argentina, ends at a different vineyard. There, the secrets of cooking in a mud oven and over a parrilla are learnt. Later that evening, enjoy a wine tasting during dinner. (B/L/D)

We leave north along Route 40, stopping at the Quebrada de la Flechas for a walk. Later, an active wellness walk through vineyards and cacti allows you to explore your new destination’s grounds. Dinner at this charming estancia offers the views of another Andean cuisine chef. (B/L/D)

A morning walk among huge boulders to learn the secrets of how to capture water from the mountains to grow a vineyard at the foot of the Andes, is a good way to start a different day. After a scenic lunch, a horseback ride or a power packed walk are the options. A magical evening at the James Turrell Museum is a must before dinner. (B/L/D)

We leave the vineyards and colonial towns, driving across red landscapes. On the way down, an invigorating walk will give you a chance to capture amazing photos. Lunch will take place at a tobacco farming town. Once in the city of Salta, a walk to the main square, which is at its best in the evening, ends at a memorable farewell dinner. (B/L/D)

In the morning enjoy a guided city tour, including a visit to the MAAM – High Mountain Archaeological Museum – with a chance of shopping for gifts to take back home. At midday we transfer you to the Salta airport for a 14.00 hrs flight to Buenos Aires. (B/L)
